If you've been working on your gluteus maximus, hopefully you get a compliment like this dish--
Nice Spiced Hali-but
1 tablespoon olive oil
1 onion, sliced
2 cloves garlic, pressed
1 16-ounce can diced tomotoes, drained
2 tablespoons balsamic vinegar
2 teaspoons ground cumin
3/4 teaspoon ground coriander
6 halibut fillets or other lean white fish, about 1 inch thick
Heat oven to 350 degrees F. In a skillet, saute' onion and garlic in olive oil over medium heat, stirring frequently, until onion is soft. Reduce heat. Stir in remaining ingredients, except fish. Simmer uncovered over low heat five minutes, stirring occasionally.
Place fish in an ungreased 11 x 7-inch pan (or there abouts). Spoon mixture over fish. Bake uncovered 25-30 minutes or until fish flakes easily with a fork.
